Honey consists wide range of sugars, minerals and vitamins and their proportions are varying from honey to honey depending on their quality and botanical origins (Saadatmand, 1999). Types and quality attributes of honey are the most essential factors explaining honey price variations. Consumer tastes and their abilities to differentiate between type and quality characteristics are the bases of prices they pay for honey.
Relative importance of each quality characteristic is represented in scores given from consumers point of view in light of their ability to distinguish the product type and qualitative characteristics.
