(Functional Food (FSN 545

Functional foods are foods, which by virtue of physiologically active food components provide health benefits beyond basic nutrition. Functional foods, nutraceuticals and dietary supplements represent a rapidly expanding segment of both domestic and international markets. The course will overview

  1. ​The chemistry of the major nutraceutical ingredient categories and the current scientific information supporting their biochemical and physiological efficacy will be addressed.
  2. Special dietary products, such as herbal based dietary products designed for a wide range of structure functional claims will be reviewed and evaluated.
  3. Regulatory aspects of labeling and structure-function claims will be covered.
  4. Provide students with an in depth understanding of the Functional foods and Nutraceuticals
