Oils are subjected to many changes. Oxidation results in changing oils characteristics and producing harmful effects in human body that affected on lipids profiles so increase the risk of cardiovascular diseases. Synthetic antioxidants are added to reduce the changes but many researchers have proved the side effects of these synthetic chemicals. So it is important to replace these artificial antioxidants with natural one to protect human health.
